In Bugis language, Mappiara means to nurture. This video documentary and video mapping work depicts the experiences of residents in Soppeng Regency and Parepare City of South Sulawesi who have made, consumed, and maintained the tradition of making kombucha to treat various diseases. Amongst other things, the theme of this work, Mappiara, was chosen as a reference to the practice of scoby (symbiotic colony of bacteria and yeast) care and maintenance as part of kombucha-making tradition. The intentional work of supporting this natural fermentation process, from keeping equipments clean, carefully measuring tea solutions, to recording fermentation and harvesting time, all ties in as a series of Mappiara. Video mapping and documentary part of this project were made by six young people from Parepare City.
